The White Truffle is the rarest and most coveted ingredient in the world. There is no substitute, no imitation, and no cooking technique that replicates what it does to food. Its aroma — floral, garlicky, intensely musky, with notes of honey and aged cheese — is unlike anything else in the culinary universe.
It cannot be cultivated. It cannot be farmed. It can only be found — by a skilled hunter and his dog, in a specific forest, at a specific moment of the season, under a specific tree.
The White Truffle is never cooked. It is shaved raw, at the very last moment, directly over the finished dish. The heat of the food releases the aroma. A few thin slices are enough to make any dish — pasta, eggs, risotto, steak — the most memorable thing you have ever eaten.
Season runs October through December. Peak: late October and November. Extremely limited availability — reserve your order as early as possible.

Never refrigerate in an airtight container — White Truffle needs to breathe. Store wrapped in paper towel in a glass jar, open, in the refrigerator. Change the paper towel daily. Use within 3-4 days of arrival for peak aroma. Never cook — always shave raw at the last moment.
